Mel, I have a fair number of easy recipies that are awesome. So if you want to cook something easy and delicious send me an e-mail for suggestions. For starters though try this.

Chicken Parm a la Evan

Preheat the oven to 350
Cut two bonesless chicken breasts into cubes. (We usually have a few in the freezer and take them out the day before.)

Dip the chicken cubes into a bowl of milk and then dredge them in bread crubs. (we buy italian flavored bread crumbs from the store)

In a large skillet over medium heat fry the breaded chicken with olive oil.

THIS IS THE IMPORTANT/TRICKY STEP

In the skillet, cook the chicken on all sides, but do NOT cook all the way through. You shouldn't be able to see any pink but if the chicken is cooked all the way it will become tough when you bake it.

Okay now drain any excess olive oil and pour the chicken into a 9x9 baking pan.

Cover with Prego pasta sauce (A large can of your favorite flavor should do it.) and grated Mozzarella cheese.

Bake at 350 until the sauce is bubbling (~20min) and cheese is melted. Serve over pasta.
